I made some yummy chicken and veggie stew for dinner! 

Ingredients: 1 onion
       3 leeks
6 large carrots
1 large parsnip
1/4 of a butternut squash
1/4 of a large swede
2 sticks of celery
1/2 cup peas
about 20 green beans
Tin of drained butter beans
2 chicken breasts cut into small chunks
(This makes a large saucepan, made it for my family too) 

1) Firstly, I cooked the chicken breast with a bit of flour in a saucepan and then I put that to one side
2) Cook the chopped onions, leeks and celery in a large pan until slightly soft
3) Add the rest of the veg in chunks (apart from the peas and butter beans)
4) Cover with hot water and add a knor chicken stock cube (can omit) 
5) After 30 minutes add butter beans, chicken and peas and cook for another 25 minutes
