Today's lunch was so good!
Sweet potato cakes with chicken and butter beans. 
Recipe for 8 cakes:
Ingredients
2 tablespoons white whole wheat flour (I used coconut flour) 
1/2 teaspoon baking powder
2 sweet potatoes (1/2 pound each)
1 large egg, beaten
1/2 teaspoon curry powder
1/2 teaspoon salt
1/4 teaspoon black pepper
4 tablespoons olive oil for frying (I Used coconut oil)


1) Mix in a bowl the flour and baking powder, plus the salt, pepper,curry powder and egg
2) Microwave sweet potato until soft, peel, and mash.
3) Mix all ingredients and form 8 cakes
4) Fry cakes in hot coconut oil
5) SERVE HOT.
