My dinner: 1 cup of brown rice, 1/2 chopped leek, 2 mushrooms, 1/2 chopped onion, 1/2 chopped sweet pepper 100g chicken breast
3 tsp coconut oil, 2 tsp soy sauce.

I baked my chicken in the over for 30 mins
Cooked a cup a brown rice, with 2 cups of water, left to boil for 20 mins until all the water had been absorbed. 
Chopped the leek, mushrooms and onion and cooked in coconut oil 
Added the chopped pepper and 3 tsp soy sauce
Then added the chicken and brown rice and cooked for a few minutes. 
EASY PEAAASSSY. Oh and that method of cooking rice makes perfect fluffy rice!
